
Veggies. We all need them but most of us probably don’t get enough of them in our daily diets. For us adults, it’s probably due to busy schedules and always being on-the-go. For kids, it’s most likely due to being picky eaters and/or being too busy playing to eat. I’m currently in the throes of my non-eating toddler; it’s a wonder how she can even function since she never eats. All of that said, I’m so happy to have found something that hides veggies in delicious, convenient muffins that can be eaten on-the-go! It’s a win-win for everyone!
Garden Lites have changed the way we eat veggies. Sure, we still have veggies with our meals and in salads but this option is quick and delicious and tastes like a treat. First, let’s be clear in that I’m not above lying to sneaking things in with my kids. I mean, if they don’t know the delicious muffins are chock-full of veggies, why would I tell them? They think they’re getting a treat and my mama heart is happy knowing I’ve done my part in keeping them alive feeding them healthy food. A good source of fiber, and protein, the Garden Lites chocolate muffins are made with zucchini and carrots; the banana chocolate chip ones are made with zucchini. Garden Lites are also gluten-free, dairy-free, nut free, and non-GMO! Stored in the freezer, they come individually wrapped and can be heated up in the microwave in 35 seconds. This is what makes them so great – they’re quick and easy! Lady A and I both eat one in the car in the morning on our way to drop her off to school (because you know I’m a madwoman in the mornings and am always late). I also keep a box with me at work to snack on throughout the day; the box fits perfectly in my laptop bag! Even I forget that they’re made of veggies. They’re so convenient and, again, so delish.
Side Note: Going back to my non-eating toddler, she totally asked for seconds after having a chocolate one today. Winning!

I am all for hiding veggies to get my kids to eat more! I throw them in smoothies, or puree them and add them to sauces and soups!
